While grocery shopping at Sam’s Club over the Easter weekend I came across a LARGE bag of green brussel sprouts. I personally love the flavor and couldn’t resist picking up 2lbs for just over $3!! Not sure what to do with them, I hopped on Pinterest for inspiration…..The dish was a huge success at my family Easter Celebration. Most folks (including the kids) didn’t even realize it was brussel sprouts and gobbled it up!!
Brussels Sprouts with Bacon, Avocado, and Lime
2lbs brussel sprouts
6 slices of bacon
1 tablespoon of minced garlic
Juice of 1 lime
2 avocados, sliced
salt and pepper
While you are slicing your brussels, cook the bacon until crispy in a large skillet. Remove the bacon from pan and let it drain on a paper towel
Add a little olive oil to the pan (I added a tiny amount of oil because I had plenty of bacon drippings left over), and add your shredded brussels, garlic, and cayenne.
Cook for just a few minutes on medium heat, until brussels start to get tender. Remove from the skillet. (Using the same skillet…you can warm the sliced avocados if you’d like)
While the brussel sprouts are still warm, mix in lime juice and crumble bacon into the sprouts. Salt and Pepper to taste.
Finally, add the sliced avocados and top with cayenne pepper to taste!
